Strawberry Pie
By Rebecca | April 28, 2008
It is getting close to summer and strawberries are coming into season. This means that from time to time they go on sale and are featured in large displays in the front of the produce section. Piles of large, red strawberries make me want to make Strawberry Pie. (In college I used to buy an entire flat of strawberries, make them into pie and invite half the ward over to eat it. Any left overs I would eat for breakfast for the next week.)
Here is my recipe for luscious Strawberry Pie.
3 Tbsp. cornstarch
1/2 cup sugar
2 cups water
1 small pkg. strawberry Jell-o
1 qt. Fresh Strawberries
1 cooked pie shell
Mix cornstarch, sugar, and water together in a sauce pan and cook until clear. Add the Jell-o and mix thoroughly. Slice strawberries into the pie shell. (You can also place whole or halved strawberries in the shell. Just make sure to wash them and cut off the stems.) Pour glaze over the strawberries until the pie shell is filled. Chill for a couple of hours. Serve with whipped topping and a big glass of cold milk!
