Baking Powder Biscuits

2 Cups Flour
3 tsp. Baking Powder
1 tsp. Salt
1/3 Cup Shortening
About 3/4 Cup Milk
Preheat oven to 450 degrees. Mix together dry ingredients. Cut Shortening into the dry mix with a pastry blender or 2 butter knives (used scissors-fashion), until mixture resembles coarse cornmeal.
Make a well in the center and pour in 2/3 cup of milk. Stir quickly round the bowl with a fork. If mixture seems dry, add a little more milk to form dough just moist enough (but not wet) to leave side of bowl and form ball.
Empty dough onto a lightly floured surface to knead. Knead it through about 10 times.
Gentry roll out dough to 3/4 inch thickness. Cut into 2 1/2 in biscuits. Place on ungreased cookie sheet and bake for 12 to 15 minutes.
For Drop Biscuits: Increase milk to 1 cup. Do not knead or roll out the dough. Instead, drop by tablespoonfuls onto lightly greased cookie sheet. Bake at 450 degrees for 10 minutes or until golden brown.
For Cheese Biscuits: Add 3/4 cup grated cheese to the dry ingredients. Make biscuits as directed.
To Make Ahead of Time: You can prepare the dough up to three hours in advance of cooking. Just refrigerate until you are ready to bake. Then allow the dough to warm to room temperature (about 15 minutes) while the oven is pre-heating. Bake as directed and serve warm.
